More Than Pie: 5 Things to Cook with Pumpkin

Pumpkin is the quintessential fall vegetable and a great source of beta-carotene, but it’s often hard to decide what to do with it beyond pies and the occasional pumpkin roll. Below are some ideas for sweet and savory pumpkin dishes that go beyond the everyday.

1.     In Thailand they’d use the native squat green pumpkins, but big orange American pumpkin chunks work just as well with shrimp or tofu in a sweet and spicy sauce made with Thai red curry paste and coconut milk.

2.     Add canned pumpkin, cinnamon, ginger and allspice to bread pudding for a smooth and delicious dessert that tastes like fall year round.

3.      Don’t forget the seeds – pumpkin seeds are delicious roasted with a little oil and salt, or toss with a little cayenne for spicy Mexican-style pepitas. You can eat them hulls and all.

4.      Sauté pumpkin and cook with corn in a creamy risotto for a burst of fall flavor and a nutritional boost. Top with roasted pumpkin seeds for crunch.

5.     Try using pumpkin anywhere you’d use butternut squash, for a heartier flavor – in soups, in ravioli with ricotta and cream sauce, or roasted with butter and brown sugar.

Bring the kids out on Saturday, April 9th at 12pm to the Bristol Club for an Easter Egg Hunt! Don't forget to bring a basket to collect eggs; and parents should bring a camera for pictures with the Easter Bunny. All Treeview children are invited!
